Olive Ascolane are a typical dish of Marche cuisine, particularly of the city of Ascoli Piceno. They are pickled green olives stuffed with a mixture of meat, breadcrumbs, eggs and cheese, then breaded and fried.

The origins of Ascoli olives are uncertain, but they are thought to date back to the 19th century. They are said to have been invented by the cooks of the Ascolan noble families, who needed to find a way to consume the considerable amounts of meat they had on hand.

The first written recipe for Ascoli olives dates back to 1863, when it was published in the book “Il cuoco marchigiano” by Giuseppe Simi. The recipe called for pickled green olives, ground veal, breadcrumbs, eggs, grated cheese and spices.Over the years, the recipe for Ascoli olives has undergone some modifications.

Today, ascolane olives are often made with a filling of veal, pork or chicken, and can be enriched with other ingredients, such as cooked ham, vegetables or cheese.Ascoli olives are a popular dish in Italy, and are often served as an appetizer or main course.
